Join us for a one-night dinner celebrating the extraordinary portfolio of Regalis Foods, New York City’s leading importer of rare and exceptional ingredients. Known for sourcing treasures such as truffles, uni, caviar, Japanese Wagyu, wild foraged edibles, and exotic seafoods, Regalis brings the elusive and extraordinary to the table.
This evening’s menu will highlight a curated selection of Regalis’s offerings, prepared with creativity and care.

- Crab Inflidita Whipped requesón, smoked trout roe
- Hawaiian Red Shrimp Heirloom tomatoes, black garlic salsa negra, smoked olive oil
- Bluefin Tuna Belly Gooseberry hot sauce, fermented tomato water, orange-stuffed olives
- Iberico Pork Collar Grilled stone fruit, ’Nduja velouté, Jimmy Nardelos, chanterelles
- Chèvre Cheesecake Cajeta, vinegar-soaked apples
This dinner will be hosted in collaboration with Regalis representative Sam — former chef at Dove’s — who will share insights into the sourcing and stories behind these remarkable ingredients.
